Each week, I'll be posting one of my recipes for you to enjoy.
This week, it's my blue corn tacos.
These are easy to assemble, with two steps to make them a vegetarian delight, or simply add grilled chicken if you like them with a little meat :)
I don't specify quantities because the amount you need to cook depends on the size of your family.
Your base filling:
Heat blue taco shells in a 350 degree oven for 5 minutes. Fill each taco with mushroom hash and top with salsa fresco.
*Mix it up: You can add some black beans to the mushroom hash if you want some protein.
I love these with a dollop of sour cream or a smidge of southwest ranch dressing.
